What is the difference between evaporation and distillation?
Evaporation is the escape of liquid particles from the surface into vapour, and the vapour is simply lost. Distillation is a full separation process: the liquid is boiled to vapour and then deliberately cooled and condensed back, so the purified liquid is collected.
Why is distillation used to purify water but evaporation is not?
Evaporation leaves the dissolved solid behind and the water escapes as vapour, so you keep the salt and lose the water. Distillation condenses that vapour back to liquid, so you recover pure water and leave the impurity in the flask.
Does evaporation only happen at the boiling point?
No. Evaporation happens at any temperature, and only from the surface of the liquid. Boiling happens throughout the liquid and only at a fixed temperature, which is why distillation uses boiling rather than evaporation.
